Organic gum arabic

Gum Arabic is a thickening agent for confectionery and a good film former with low viscositie even at high concentrations. It has adhesive and binding properties and good mouthfeel characteristics. Gum Arabic is very soluble in water (solutions of up to 50% can be obtained). Gum arabic dissolves completely and rapidly, after about 20 minutes, in twice its mass of water. It's practically colourless, odourless and tasteless. Gum Arabic is an excellent source of dietary fiber.
